ABOUT Shahi Bhutta RECIPE

A rich yet deceptively simple side dish that is just perfect with rotis or rice.

Ingredients Serving: 4

  1. For the ground paste:
  2. Poppy seeds 1 - 1/2 tsp, dry roasted
  3. Grated dry coconut 3 tbsp
  4. Other Ingredients:
  5. Oil 2 tbsp
  6. Green cardamom - 2
  7. Black cardamom - 2
  8. Cloves - 3
  9. Cinnamon - 1 inch piece
  10. Onion - 1 medium, finely chopped
  11. Ginger-Garlic paste - 1 tsp
  12. Green chili - 1, finely chopped
  13. Turmeric - 1/4 tsp
  14. Coriander powder - 1/2 tsp
  15. Cumin seed powder - 1/2 tsp
  16. Paprika powder - 1/2 tsp
  17. Fresh or frozen corn - 450 gms
  18. Milk - 240 ml
  19. Salt to taste
  20. Tomato - 1 large, finely chopped
  21. Garam masala - 1/2 tsp
  22. Rice flour - 1 tsp mixed with 2 tbsp of water
  23. Coriander leaves - 1 tbsp to garnish

Instructions

  1. Grind the poppy seeds and the dry coconut along with some water to a fine paste and set aside.
  2. Heat oil in a pan and add the green cardamom, black cardamom, cinnamon and cloves and fry for a minute or until they puff up.
  3. Stir in the onion and fry till they turn transcluscent. Add the ginger garlic paste and the chopped green chilies and fry till the raw smell goes.
  4. Add the turmeric and the ground ingredients and fry for two minutes. Stir in the coriander powder, cumin powder, Paprika powder and mix well.
  5. Add the corn, milk, salt and cook covered on low heat for 8-10 minutes or until the corn is cooked.
  6. Add the rice flour paste, tomatoes and garam masala and mix well. Garnish with coriander leaves and serve hot with rice or rotis.
