Karela fry is simple dish which goes well as a side dish with rice and dal fry. I have been eating this dish since my childhood.
Nice one.
Cut karela in roundels and apply salt and set aside for 10-15mins
After 15 mins squeeze of salt water and wash Karela once again in plain water.
Now heat oil, add mustard seeds and allow it splutter, add coconut slices if using or just add karela slices and curry leaves and fry without stirring for 3 mins
Once Karela start changing color from one side stir once and add onion and green chilly and fry once again everything turns light brown in color
Once Karela starts changing color add salt, turmeric, chilly powder and cook on a low flame for another few minutes until Kerala turns crispy and dark in color
Remove from stove and serve with steam rice and daal fry
