ABOUT Phiki matthi RECIPE

A typically Punjabi snack which has got its own fame due to its simple yet amazing taste. This matthi is phiki, yes it is prepared without salt. This matthi is a must during weddings with mithyai and also in sargi on Karvachauth. Ingredients required are minimal but to get the perfect texture technique matters a lot.

Ingredients Serving: 2

  1. 1 cup all purpose flour
  2. 2 tbsp of clarified butter/ghee - lukewarm
  3. Lukewarm water to prepare the dough
  4. Ghee for deep frying

Instructions

  1. In a big mixing bowl seieve the flour and add ghee to it. Mix this mixture well for at least 5-10 minutes.
  2. Now add little water and prepare the dough.
  3. Immediately roll a big sized circle just like what we do for chapatti but a bit thicker than that.
  4. With a knife put several small cuts all over the surface of the matthi.
  5. Gently slip the matthi in the wok to deep fry and cook on a slow flame till it turns pinkish.
  6. Take it out and let it cool down completely.
  7. Enjoy with pickle or just with some tea.
