Sardines are often called the healthiest fish and they are certainly one of the most budget friendly.Some experts call them a natural multivitamin food. So here I have made this curry in my way...Lets's see the recipe

Ingredients Serving: 4
1/2 Kgs Sardine fish washed and cleaned properly
For marination:-
Chilly powder- 2 tsp
Turmeric powder- 1 tsp
Ginger Garlic Paste- 1 tbsp
Salt as per your taste
For Gravy Masala:-
Onion- 1 medium size sliced length wise
Tomato- 1 small chopped
Ginger and Garlic- chopped finely 2 tbsp if both combined together
Turmeric powder- 1 tsp
Chilly powder- 2 tsp
Kashmiri Chilly powder- 2 tsp
Coriander powder- 2 tsp
Mustard seeds
Oil
Fenugreek powder- 1 tsp
Curry leaves- few sprigs
Coconut oil- 1 tsp
Kodumpulli (Kerala tamarind)- 3 pieces
Water- 2 cups
Instructions
First marinate fish with all the masala given under marination. Set aside for 15 mins.
Heat oil in pan and fry marinated fish to 70 %. Do not fry completely. Remove from pan and set aside.
Heat another pan add little oil and fry Onion, Ginger, Garlic and tomato. Fry this for few mins until tomato get mushy.
Add turmeric powder, chilly powder and coriander powder. Fry for 2-3 mins.Remove from pan and allow it to cool down
Once masala cools down grind to fine paste adding little mustard seeds.
Heat pan or clay pan(Meen Chatti) add little oil and fry ground masala until oil starts separating from the side.
Add Kodumpulli,water and salt, cover with lid and allow it to boil for few minutes.
Add Fish pieces and curry leaves, mix slowly. Cover with lid and cook until you see darker color of Gravy. Your gravy will turn from red to dark brownish color.
Add fenugreak powder stir well and then add coconut oil from top. Cover with lid and switch off the flame.
Serve hot with steam rice.
