Motichoor Ladoo

Ingredients to make Motichoor Ladoo

  • besan flour 1 cup
  • sugar 1 cup
  • Mawa / khoya / unsweetened khoya 1/4 cup
  • Fine suji 1 1/2 tbsp
  • Cardamom powder as per choice
  • Melon seeds 1 tsp
  • Orange red food color - a small pinch
  • Baking Soda - 1/4 tsp
  • Oil for Deep frying

How to make Motichoor Ladoo

  1. Dry roast the melon seeds and keep it aside.
  2. Sieve the besan flour well with baking soda and add orange red color followed by suji to this. Mix the besan flour with 3/4 cup of water (Add water little by little and check the consistency) mix well and make sure there are no lumps. Batter should be like dosa batter.
  3. Heat oil in a pan. Drop a small drop of besan batter in oil to check whether it rises in the oil soon after it is dropped up ,gas should be in high flame otherwise boondi will stick together.Bring the boondhi ladle just 3 or 4 inches above the oil. Take besan batter in a ladle and spread over the boondi ladle. Lightly tap the boondi ladle so that the boondis easily fall off into the oil.
  4. It just takes less than a minute for the boondis to get fried for ladoo. Remember that the boondis should be taken off from oil, before it turns crispier. Soon after the oil stops sizzling, remove the boondi to a strainer or to a kitchen tissue paper to drain off the excess oil. For the next batch, wash the boondi ladle in water and wipe it with a clean kitchen towel. Likewise make boondis and wash the ladle after every batch to avoid the tails in the boondi.
  5. Sugar syrup: Heat a pan with 1 cup of sugar and 1/2 cup of water. Stir well to dissolve the sugar, let it boil to attain one thread consistency in sugar syrup. Turn off the flame.
  6. Mix the prepared boondi with sugar syrup. Sugar syrup should be hot, mix well so that all the boondis are coated in the sugar syrup.
  7. Separate 2-3 tbsp of boondi aside and grind the remaining in the mixer if you feel it is dry add just 1 tsp of boiling water. Just give a pulse. If you grind too much, it may not be easy to shape the ladoos.
  8. Now mix the grounded boondis with whole boondis.Add roasted melon seeds , grated 1/4 cup of khoya and cardamom powder.
  9. Mix well boondi and khoya together ,start shaping the ladoos by applying some ghee on your palms and shape the ladoos and place it on butter paper or on a small cupcake liner for the first few hours.
  10. Garnish each ladoo with melon seeds. Serve these ladoos to your family and loved ones.
