Ingredients Serving: 6

  1. Maida 2 cups
  2. Semolina 2 tbsp
  3. Curd 2 tbsp
  4. Baking soda 1/4 tsp
  5. Salt to taste
  6. Sugar 1 tsp
  7. Baking powder 1 tsp
  8. Oil 2 tbsp
  9. Milk 1 cup
  10. For stuffing...
  11. 2 boiled potatoes
  12. Salt to taste
  13. Red chilli powder 1/2 tsp
  14. Chat masala 1/2 tsp
  15. Garam masala 1/2 tsp
  16. Corriender leaves chopped 2 tbsp
  17. Green Chilli 2
  18. Onion 1

Instructions

  1. TAKE 2 TBSP CURD, ADD 1/4 TSP SODA, MIX & KEEP ASIDE
  2. TAKE 2 CUPS FLOUR, ADD 1 TSP SUGAR, SALT TO TASTE
  3. ADD 2 TBSP OIL, 1 TSP BAKING POWDER, MIX
  4. ADD THE CURD-SODA MIX, RUB IN
  5. ADD 2 TBSP SEMOLINA, 1 CUP MILK, KNEAD INTO A SOFT DOUGH
  6. KEEP ASIDE FOR 30 MINS
  7. TAKE 2 BOILED, GRATED POTATOES, ADD 1 CHOPPED ONION, 2 GREEN CHILLIES
  8. ADD 1/2 TSP EACH OF RED CHILLI, GARAM MASALA & CHAT MASALA POWDERS
  9. ADD 2 TBSP CHOPPED CORIANDER LEAVES, SALT TO TASTE, MIX WELL, KEEP ASIDE
  10. MAKE EQUAL SIZED BALLS OUT OF THE READY DOUGH
  11. ROLL INTO SMALL POORIS
  12. PLACE 2 TBSP READY POTATO MASALA IN THE CENTRE, GATHER & SEAL THE ENDS
  13. ROLL OUT AGAIN
  14. SPRINKLE 1 TSP CORIANDER LEAVES, ROLL OUT INTO A ROTI
  15. GET ALL THE STUFFED KULCHAS READY, KEEP ASIDE FOR 15 MINS
  16. PLACE ON A MEDIUM HOT TAVA
  17. COVER & COOK FOR 2 MINS ON SLOW HEAT
  18. FLIP & COOK FOR 2 MORE MINS
  19. COOK TILL GOLDEN BROWN FROM BOTH SIDES LIKE THIS
  20. SPREAD MELTED GHEE ON TOP
  21. SERVE HOT
