ABOUT Palak Corn Masala RECIPE

A variation of palak paneer for corn lovers. Boiled soft juicy corn with blanched pureed Palak spiced up with North Indian spices and onion-tomato masala.

Ingredients Serving: 4

  1. 3 Spinach bunches
  2. 100 gm fresh sweet corn
  3. 1 big size onion
  4. 1 big tomato
  5. 1 tsp ginger garlic paste
  6. Salt and red chilli powder, as per taste
  7. Cumin powder half tsp garam masala optional
  8. Ghee 1 tsp or Rice oil or Olive oil

Instructions

  1. Blanch Spinach with half tsp salt and make a thick puree using a blender.
  2. Boil corn and keep aside.
  3. Finely chop onion and tomato.
  4. Heat oil or ghee in a pan or kadai.
  5. Add the onions and fry till they turn golden.
  6. Add tomatoes and all spices, mix well.
  7. Mix in the corn now and stir well. Add 1/4 cup water if it starts sticking to the bottom.
  8. Now add the Spinach Paste and mix well. Simmer for 5 minutes.
  9. Serve hot with tandoori roti or Plain Parathas or chapatis.

Happy to see that u have used less masala n the goodness of cprn n palak remains. Not adding butter or cream at the end as in any other palak recipe makes it more healthier
