Ingredients Serving: 2

  1. Pears long and firm 2
  2. Hibiscus flower petals 25
  3. Grated small beetroot 1
  4. Star anise 2
  5. Cardamom 2
  6. Cinnamon Stick 1
  7. Honey 1/3 cup
  8. Water as required
  9. Melted dark chocolate 4 spoons
  10. Chopped pista 8 to 10
  11. Silver balls to garnish
  12. Rice 2 spoons
  13. Milk 1/2 liter
  14. Salt a pinch
  15. Dates jaggery as ler your taste

Instructions

  1. Wash and Pat dry hibiscus leaves
  2. Soak rice in water
  3. In a pan put water and add hibiscus leaves and grated beetroot
  4. Add star anise, cardamom, cinnamon stick and honey. Bring it to boil.
  5. Next add peeled pear one by one
  6. Lower the flame and in between turn the sides of pears so that colour is coated from all sides properly.
  7. Once pears are cooked, remove it on tissue paper to drain the excess water from it
  8. Now starin the Ruby coloured water and put back on the flame to thicken it more.
  9. In another pan add milk and bring it to boil
  10. Add soaked rice and a pinch of salt
  11. Cook on slow flame till rice is cooked fully
  12. In between add little water from time to time
  13. Once rice is cooked and it's merged in milk, put off the flame
  14. Add dates jaggery and keep mixing till it melts completely.
  15. Keep it aside to cool a bit.
  16. Now pour ruby coloured thickened sauce over pears one more time.
  17. Keep it aside
  18. Melt the dark chocolate in microwave
  19. Mix it at every 30 second interval till it becomes of dripping consistency
  20. Dab the excess sauce from the bottom of pears with tissue paper
  21. Coat the lower 1/4 portion of pears in melted chocolate
  22. use 2 spoon for pouring chocolate over pears. One for pouring nd one for spreading.
  23. Immediately sprinkle silver balls and chopped pista over chocolate
  24. Now in a deep plate pour rice kheer first and then place poached pears over it
  25. You can serve rice kheer warm or cold
