ABOUT Vettu Pulinkari (Mix vegetables curry) Kerala Style RECIPE

Vettu (cut)Pulinkari(sour curry) this recipe i learnt from my mother in law. When u r bored eating sambar then u can try this dish which is yet very similar to sambar but has little different taste. In olden days when you have sudden guest and do not have much things to cook in short notice this was the recipe our mummy's generation people use to cook and serve guest.

Ingredients Serving: 3

  1. Toor dal- 1/2 cup
  2. Turmeric- 1 tsp
  3. Water- 1 cup
  4. Salt as per your taste
  5. Vegetables you can use same as sambar veggies - beans, carrot, brinjal, jerkins, white pumpkin, ladies finger, elephant yam etc
  6. Onion- 1 sliced length wise
  7. Tomato- 1 roughly shopped
  8. 1 lemon size tamarind soaked in warm water and extract juice out of it
  9. Chilly powder- 2 tsp
  10. Coriander- powder- 1 tbsp
  11. Hing- 2 tsp
  12. Oil of your choice
  13. mustard seeds- 1tsp
  14. Dry Red chillies- 2 nos
  15. Shallots- 3 nos chopped in round shape
  16. Curry leaves- few sprigs
  17. Corainder leaves- 2 tbsp chopped finely(Optional)
  18. Fenugreek powder- 1 tsp

Instructions

  1. Cook toor dal in pressure cooker adding water, turmeric and salt. Cook until only 1 whistle
  2. After one whistle switch off the flame and allow pressure to release. Now add all cut vegetables including onion and tomato, close lid and cook once again until 1 more whistle
  3. Once done release pressure and add tamarind juice and alllow it to boil for 2 mins and then remove from stove and set aside
  4. Now for tempering heat oil add mustard seeds allow it to splutter add shallots, red chillies,curry leaves, hing and fry for 2 mins.
  5. Next add coriander powder and fry for 1 min then add chilly powder and fry for another few seconds. Add fenugreek powder and switch off the stove immediately
  6. Pour this tempering over the pulinkari and add coriander leaves cover with lid and set aside.
