ABOUT Mooli Ki Bhurgi (stir fried radish with leaves) RECIPE

It is the most Indian dish. In every state it is made with the same love. I have fond memories of my grandmother making this heavenly dish. I could even never touch that level although the ingredients are the same. Perhaps there is difference in the measure of love.

Ingredients Serving: 2

  1. Radish and fresh green leaves, diced and cut finely, 2 cups
  2. A pinch of hing/asafoetida
  3. Carom seeds (ajwain) 1 tsp
  4. Turmeric 3/4 tsp
  5. Besan (gram flour) 1 tbsp
  6. Green chilli seeds removed, diced 1 tbsp (I like it less spicy)
  7. Red chili powder 1/4 tsp
  8. Salt 1/2 tsp or as per taste
  9. Mustard oil 2 tbsp

Instructions

  1. Heat oil and add the hing. Fry it for 30 seconds.
  2. Add besan and carom seeds, fry it for a second.
  3. Now put in the radish, salt, turmeric, chilli, green chillies and cook it covered on a low flame while stirring in between.
  4. Add a little water (if necessary), if the bhurji starts sticking.
  5. Check for tenderness and remove from the heat.
  6. Serve it with plain paranthas or chapati.
