Mooli Ki Bhurgi (stir fried radish with leaves)

Ingredients to make Mooli Ki Bhurgi (stir fried radish with leaves)

  • Radish and fresh green leaves, diced and cut finely, 2 cups
  • A pinch of hing/asafoetida
  • Carom seeds (ajwain) 1 tsp
  • Turmeric 3/4 tsp
  • Besan (gram flour) 1 tbsp
  • Green chilli seeds removed, diced 1 tbsp (I like it less spicy)
  • Red chili powder 1/4 tsp
  • Salt 1/2 tsp or as per taste
  • Mustard oil 2 tbsp

How to make Mooli Ki Bhurgi (stir fried radish with leaves)

  1. Heat oil and add the hing. Fry it for 30 seconds.
  2. Add besan and carom seeds, fry it for a second.
  3. Now put in the radish, salt, turmeric, chilli, green chillies and cook it covered on a low flame while stirring in between.
  4. Add a little water (if necessary), if the bhurji starts sticking.
  5. Check for tenderness and remove from the heat.
  6. Serve it with plain paranthas or chapati.
