Ingredients to make Mehri (Rice cooked in buttermilk)

  • Rice 1/2 cup
  • Buttermilk 2 cups (sour)
  • Fenugreek seeds 1/4 tsp
  • Mustard seeds (rai) 1 tsp
  • Ginger 1 tsp (grated)
  • Zeera 1/4 tsp
  • Turmeric 1/2 tsp
  • Red chilli powder 1/4 tsp
  • Zeera powder 1/4 tsp
  • Water 2 cups
  • Green chillies diced 1
  • Refined oil 2 tbsp (traditional recipe uses mustard oil)

How to make Mehri (Rice cooked in buttermilk)

  1. Pressure cook the rice using 2 cups water till 4 whistles blow. The cooked rice needs to be mushy.
  2. In a deep pan, heat oil and add the fenugreek seeds, fry till it turns dark brown.
  3. Add the mustard seeds, stir for 30 seconds and add the ginger, turmeric, red chilli powder and stir it well.
  4. Add rice to the above mixture and mix well. Now pour the buttermilk into the rice mixture and keep stirring. Add salt.
  5. Boil it well for 10 mins and remove from the heat.
  6. Sprinkle cumin powder and some green coriander and serve it hot or cold.
