Ingredients to make Chicken Seekh Kabab from coriander pesto

  • 2 chicken breasts finely minced (approximately 500 gms)
  • 4 garlic cloves finely chopped
  • 1 inch ginger finely chopped
  • 1/3 cup onions finely chopped
  • 1/3 cup coriander pesto, made by grinding coriander stems (of 1 bunch) with 4 green chillies, 2 tbsp olive oil and 1 tbsp lemon juice Do not use any water in pesto. (You can also use coriander leaves to make the pesto.)
  • 4 tbsp cashews blanched and grounded to a fine paste
  • 1 tsp garam masala
  • 1 tsp white pepper powder
  • 1 tbsp kashmiri mirch powder
  • 1 tsp chat masala
  • Black salt or normal salt as per taste
  • 8 bamboo sticks(satay sticks) soaked in water for atleast 30 minutes
  • Oil for shallow frying

How to make Chicken Seekh Kabab from coriander pesto

  1. Mix together all the ingredients except the oil in a bowl.
  2. Heat a tawa or a non-stick pan and drizzle some oil on it. Wet your hands, take a little chicken mixture and spread it around a satay stick. Press firmly and place the seekh kababs on the tawa.
  3. Cook it, turning from time to time, so that they cook evenly all around. Baste with butter or oil at regular intervals.
  4. Serve it hot with green mint chutney.
