Garlic and Pepper Mushroom Roast

Hearty meat-like mushrooms are an economical and nutritious way to enhance any meal.My this special recipe of mushroom loved by each and every member of my family.

Ingredients Serving: 2

  1. Mushroom- 250 gms( clean and add turmeric mix well and then add water and set aside for 2mins
  2. Onion - 1 big chopped finely
  3. Garlic- chopped roundels 3 to 4 tbsp
  4. Ginger- 1 tbsp finely chopped
  5. Green chilly- 1 no finely chopped
  6. Tomato- 1 finely chopped
  7. Curry leaves- few sprigs
  8. Coconut slices- a handful
  9. Mustard seeds- 1 tsp
  10. Fennel seeds powder- 1 tsp
  11. Pepper powder- 2 tsp
  12. Turmeric powder- 1 tsp
  13. Kashmiri chilly powder- 1/2 tsp
  14. Chicken masala or garam masala- 1 tsp
  15. Hing- a pinch
  16. Coconut oil - 2 tbsp
  17. Coriander leaves- a handful for garnishing

Instructions

  1. Heat oil in a pan, add mustard seeds allow it to splutter, add coconut slices fry until light brown, add chopped ginger,garlic,green chilly and fry for another 2 mins then add onion and curry leaves now fry until onion turns brown in color.
  2. Once onion masala is roasted well add coriander powder, and fry until raw smell goes off, add pepper powder, turmeric powder, chilly powder and fennel powder stir well and fry for 2-3 mins add salt and mix again.
  3. Now add chopped tomato and fry until tomato turns mushy, cover with lid and cook on slow flame for 5 mins.
  4. Now remove lid and add chopped mushroom and stir well, cover with lid again and cook until all water oozes off
  5. Once gravy is dried completely add chicken masala and mix well
  6. Add coriander leaves and mix well, switch off the flame and set aside.
  7. Serve with steam rice and dal fry.
