Lauki Halwa/ Pudding

Ingredients to make Lauki Halwa/ Pudding

  • 3 to 3.5 cups grated bottle gourd or lauki or dudhi
  • 500 ml milk (which has been already boiled before)
  • 1 cup sugar
  • 3-4 tbsp ghee/clarified butter
  • 4-5 cardamoms, powdered or crushed
  • 1/2 cup chopped almonds, raisin and cashews.
  • 5 tbsp condensed milk
  • Few strands of saffron

How to make Lauki Halwa/ Pudding

  1. Wash, peel and grate the bottle gourd.
  2. In a kadhai or deep wok combine the milk and grated bottle gourd. Bring the whole mixture to a boil and then lower the flame to medium.
  3. Keep on stirring, the bottle gourd will cook in the milk and the milk will start to reduce and evaporate. When the milk is reduced to half add saffron and almonds flakes. Keep stirring till the mixture dries.
  4. In a non-stick pan, heat the ghee/clarified butter, add cashew and raisins. Transfer the dried mixture immediately.
  5. Keep stirring until the mixture dries out completely and gets coated with ghee. It might take 10 to 15 minutes.
  6. Lastly add the sugar and condensed milk and mix it with the halwa. The sugar will melt and the halwa will become a little liquidy. Cook the halwa for a few minutes. Keep on stirring it.
  7. When you know by looking at the lauki halwa that the consistency is just right and the ghee has separated then turn off the burner.
  8. Add the cardamom powder with a garnish of the remaining pistachios and mix.
  9. Serve hot or at room temperature. Enjoy!

My Tip:

Tips to keep in mind: Squeeze the grated lauki before mixing with the milk, this will reduce the cooking time and will give a nice texture to the whole dish. Condensed milk is optional. It can always be made sugar free. Bottle Gaurd has a cooling effect so a best dessert for this hot summer.
