Ingredients to make Vegetable pulao

  • 2 cups - basmati rice
  • 1 - onion
  • 3 tbsp - ghee
  • 1 - carrot, cut into cubes
  • 1/2 cup - Peas
  • 2 tbsp - Cashewnuts
  • Salt to taste
  • 1 Pinch - Turmeric powder
  • 1 cinnamon stick
  • Ginger-garlic paste -1 teaspoon
  • 1/2 onion
  • 2 cloves
  • 1 green chilli
  • 5-6 pudina leaves
  • Chopped coriander leaves
  • 2 black cardamoms/elaichi

How to make Vegetable pulao

  1. Soak rice for 30 mins.
  2. In the mixture, add cardamom, cinnamon, green chilli, ginger-garlic paste ,pudina leaves, chopped onion, cloves and make a ground paste.
  3. Add ghee in pan, then add raisin, cashew and saute it. Keep it aside.
  4. Add the chopped onion in it and saute. Then add the ground paste and stir fry for 10 minutes.
  5. Add the boiled vegetables in it and cook it for a while, then add the turmeric powder.
  6. Add the rice, salt, 4 cups of water and stir well. Cover and cook until the rice is done on a slow flame.
  7. Add cashew and raisin in it. Serve it with raita.
