ABOUT Aloo Gobhi Jhor RECIPE

Ingredients Serving: 4

  1. Boiled potatoes 4 medium sized cut in chunks
  2. Cauliflower florets 2 cup
  3. Mustard Oil 2 tbsp
  4. Onion sliced medium 2
  5. Tomatoes chopped 3
  6. Ginger garlic paste 1 tbsp
  7. Turmeric powder 1/2 tsp
  8. Red chilli powder 2 tsp
  9. Cumin powder 1/2 tbsp
  10. coriander powder 1 tbsp
  11. Garam masala 1 tsp
  12. Bay leaf 2
  13. Cumin seeds 1 tsp
  14. Salt to taste
  15. Green coriander leaves chopped 1 tbsp
  16. Water 1 cup or as required for gravy

Instructions

  1. Heat oil in a pan, add cumin seeds, once it crackles, add bay leaf. Add cauliflower, cook till it becomes brown on top. Remove from oil and keep aside.
  2. Using the same pan, add sliced onions and cook till they become translucent. Add ginger garlic paste and cook till the raw aroma goes off. Add tomatoes and dry powders except for garam masala powder, cook till it starts leaving oil.
  3. Add cooked cauliflower and boiled potatoes. Mix properly so they are coated with masala mixture, add salt and garam masala powder. Give a good stir, add water and let it boil. Once it starts boiling, simmer to low heat for 10 minutes so that the vegetables absorb the flavours.
  4. Check seasoning and consistency. Turn off the heat, add chopped green coriander leaves. Serve with Rice or chappati
