Fruit parfait with homemade granola

Ingredients to make Fruit parfait with homemade granola

  • for the granola
  • 1 cup oats
  • 1/4 cup sliced almonds
  • 1/4 cup chopped walnuts
  • 1/4 cup roasted cashews
  • 1/4 cup chopped dried apricots
  • 1/4 cup cherries
  • 1/4 cup black currants
  • 1/4 cup oil
  • 1/4 cup honey
  • for the parfait
  • sweetened whipped cream
  • 3/4 cup chopped mix fruits( apple, grapes, mango, banana)

How to make Fruit parfait with homemade granola

  1. First to make granola, mix oats almonds and walnuts in a bowl.
  2. Mix oil and honey separately and add to the bowl of oats.
  3. Mix all the ingredients well till they are coated well.
  4. In a flat baking tray lined with parchment, spread all the mix.
  5. Bake in a preheated oven at 150 degree Celsius for 20-25 mins till brown and toasted.
  6. Keep aside to cool.
  7. When cooled, add roasted cashews, cherries , apricots and black currants and mix well.
  8. Chop all the fruits and mix in sweetened whipped cream.
  9. Take glasses and fill them 1/3 with the cream and fruits.
  10. Make another 1/3 layer with the cooled granola.
  11. Top it with some more cream and fruits.
  12. Serve cold.

My Tip:

You can add your choice of dried fruits for the granola.
