ABOUT Mango rose cupcakes RECIPE

Delicious cupcakes flavoured with fresh ripe mangoes and decorated as rose.

Ingredients Serving: 6

  1. 3 mangoes medium sized
  2. 1/2 cup Sugar
  3. 1 tesp lemon juice
  4. 1/2 cup curd
  5. 1/2 cup milk powder
  6. 1/4 cup oil
  7. 2-3 drops vanilla essence
  8. 1 cup all purpose flour
  9. 1 tesp baking powder
  10. 1/4 tesp baking soda

Instructions

  1. Puree 2 mangoes pulp in grinder.
  2. Cook mango puree with sugar and lemon juice for approx 5 minutes until mixture becomes translucent and glossy.
  3. Let it cool down.
  4. Mix together curd, milk powder, oil and vanilla essence nicely.
  5. Add cooked mango puree and mix well.
  6. Seive together all purpose flour, baking powder and baking soda.
  7. Mix dry ingredients into wet ingredients very well and make a smooth lump free batter.
  8. Fill the batter in greased paper cups half way through.
  9. Microwave on high for 5 minutes.
  10. Cool and demould.
  11. Top with butter icing.
  12. Cut a mango in very thin slices.
  13. Arrange mango strips over icing to give rose look.
  14. Relish!!!
