Vegetable Stock

Ingredients to make Vegetable Stock

  • 2 liters water
  • 1 whole onion
  • 2 stalks of celery
  • 2 carrots
  • 1 spring onion
  • fresh parsely
  • milk to skim
  • spice of your choice

How to make Vegetable Stock

  1. In a large pot add water, onion, celery, carrots, leek, spring onion and parsley and the spices of choice.
  2. Bring to a rolling boil. Skim the dirt off the surface by adding a bit of milk.
  3. Turn down the heat. Let it simmer for atleast 1 hour or until the quantity is halved.
  4. Let it cool. Strain and store in an air-tight container
