ABOUT Caramel Bhapa Doi RECIPE

Caramel Bhapa Doi is a creamy, rich caramel flavored yoghurt that is steam cooked and served cold.Such a simple and easy to make dessert that can be made much ahead to the occasion and refrigerated. It is a speciality of Bengali cuisine that is made in so many different flavors such as plain, pista, caramel, mango, vanilla, strawberry and much more. You just need to brush up your imagination and creative skills. Such a versatile and tastiest dessert ever!

Ingredients Serving: 6

  1. 1 cup plain natural yoghurt
  2. 400 gm /1 can sweetened condensed milk
  3. 1/2 cup caramel / toffee sauce
  4. 1 cup full fat milk
  5. Chopped nuts for garnishing, optional 
  6. A pinch of saffron to garnish, optional 
  7. Foil for wrapping/ covering
  8. Water for steaming

Instructions

  1. In a deep dish, add the yoghurt, milk, caramel, condensed milk and stir it well without any lumps. Now strain this mixture using a sieve.
  2. Next pour this mixture into popsicle moulds, ramekins or kulfi pots 3/ 4way full. Wrap their tops with foil or close with lids if you have.
  3. In a pan pour some water about two inch level and bring it to a soft boil. Later place the wrapped moulds in bubbling water and close the pan with a lid and steam cook for 10 mins.
  4. Next unwrap and garnish with chopped nuts and saffron strands. Wrap them once again and refrigerate for 2 hrs or until set. Now they are ready to be served.
