ABOUT Watermelon-Tomato Curry RECIPE

Watermelon is one of the appropriately consumed fruits during summer. It has good amounts of potassium, magnesium, and other important nutrients. The most familiar edible part is the fruit but once you scrape the green skin you can notice the “rind” which is equally edible. It tastes similar to cucumber. Today I present a curry which tastes delicious when served with hot steamed rice and roti.

Ingredients Serving: 4

  1. Watermelon rind : 1 cup
  2. Tomato slices : 1 cup
  3. Onion ( finely chopped ) : 1/2 cup
  4. Mustard seeds : 1/4 teaspoon
  5. Cumin seeds : 1/4 teaspoon
  6. Ginger-garlic paste : 1 tablespoon
  7. Oil-2 tablespoons
  8. Turmeric powder – a pinch
  9. Salt to taste
  10. Green chilli – 2
  11. Red chilly powder – 1 teaspoon

Instructions

  1. Wash the melon and scrape off its green skin. Discard the skin and carefully cut the white portion i.e rind into cube sized pieces.
  2. Heat oil in a pan. Add mustard and cumin seeds. Allow them to splutter.
  3. Now add the chopped onion & green chilli slices to it. Let it fry until the onion pieces turn translucent. To this add the cut pieces of watermelon rind and cook for 2 minutes.
  4. Then add the tomato slices to it. Sprinkle turmeric powder and salt over it. Mix well and add the ginger -garlic paste to it. Allow this mix to cook for 5 to 10 minutes over a low-medium flame.
  5. Once the tomato slices turn tender , add red chilly powder to it. Pour sufficient quantity of water to obtain a gravy consistency and cook for 5 more minutes over a medium flame.
  6. Turn off the flame and transfer it to a serving bowl.
  7. Serve it hot with steamed rice or roti/parantha/chapati.
