This recipe was created one evening when I had called a few friends over for dinner and everything I had planned went for a toss. I was planning to bake some delicious chicken but ended up making two more recipes that were vying for oven space. So, I improvised and inspired by Nigella Lawson's Delicious Oven-Baked Undeep Fried Chicken. The result was delicious and absolutely easy to make - another of my quick fixes. The dip was made by my friend Richie.

Curry Crumb Fried Chicken - With a Garlic-Yoghurt Dip

Ingredients to make Curry Crumb Fried Chicken - With a Garlic-Yoghurt Dip

  • For the Marinade:
  • 1/2 kg fresh Chicken breast (cut into strips)
  • 3 large tbsp Curd
  • 1 tsp dry Herbs/2 tbsp fresh Herbs
  • 4-5 cloves of Garlic
  • 1 tsp Chilli powder (as per your taste)
  • 1/2 tsp Garam masala powder
  • 1 tbsp fresh Coriander leaves (chopped)
  • 1 Egg
  • Salt and Pepper to taste
  • For the Crumb:
  • 2 cups of bread crumbs
  • (toast old bread for 5 min grind and use)
  • 1 tsp Ggaram masala powder
  • Salt to taste
  • Oil to deep fry
  • GARLIC AND YOGHURT DIP
  • 2 tbsp Myonnaise
  • 4 tbsp Curd
  • 1-2 Garlic cloves
  • Salt and Pepper to taste

How to make Curry Crumb Fried Chicken - With a Garlic-Yoghurt Dip

  1. Take the ingredients mentioned under ‘marinade’ in a bowl and add chicken pieces to it. Mix well and leave it to marinade for 30 minutes or overnight.
  2. With the ingredients mentioned under ‘bread crumbs’ season the bread crumbs.
  3. When you are ready to fry the chicken, first roll the chicken pieces in the seasoned bread crumbs and deep fry in the hot oil till the chicken pieces are turn tender and golden brown crust is formed on outside.
  4. GARLIC AND YOGHURT DIP
  5. To make this dip combine all the ingredients and mix well. Keep this in refrigerator for 15 minutes. Serve as a dip with any finger food.
  6. Serve with any finger food.

My Tip:

You can bake the chicken. After it has been marinated, roll in the bread crumbs and store in the fridge for at least an hour and then bake at 180 C for 15-20 minutes. I haven't tried it, but Nigella says so.
