A delicious fruits and nuts cake with hints of thandai flavors .

Ingredients Serving: 7

  1. 1 1/4 cup all purpose flour
  2. 1/4 cup oil
  3. 1 tsp baking powder
  4. 1 tsp baking soda
  5. 1/4 cup chopped cranberries
  6. 4 tbsp milk powder
  7. 2 tbsp thandai powder
  8. 1 tbsp gulkand
  9. . 3/4 cup powdered sugar
  10. 2 tbsp cornflour
  11. 1/4 to 1/2 cup buttermilk .
  12. 4 tbsp milk
  13. 2-3 tbsp cherries to garnish the cake .
  14. Ingredients to make thandai powder :1/4 cup almond sliced
  15. 1/4 cup cashew nuts
  16. 1/4 cup pistachios
  17. 8 cardamoms
  18. 1/4 tsp pepper
  19. 2 tbsp sugar
  20. 1/8 tsp saffron
  21. 1 tbsp melon seeds
  22. 2 tbsp poppy seeds ( khus khus)
  23. 1 tbsp fennel / saunf
  24. 1/4 tsp nutmeg grated
  25. 1 petal mace

Instructions

  1. blend all thandai powder ingredients to coarse powder. this is a pressure cooker cake .you can also bake in regular oven
  2. Preheat the heavy pressure cooker pan in which you will bake on gas stove , after layering with salt and placing a heavy plate or stand inside, cover with lid and preheat on high for 3-4 minutes till you prepare the batter .
  3. in a bowl add the oil , powdered sugar , beat well, add buttermilk , and blend all three well . in another bowl, i have added my cake batter ingredients mentioned in the list above.
  4. make a semi thick batter, adjust consistency with buttermilk .ingredients ( you can use the mixie jar to blend buttermilk , oil and sugar )
  5. now add this blended buttermilk , oil sugar mixture to the cake batter ingredients mixture.add the gulkand, chopped cranberries , thandai powder to the cake batter.
  6. makea semi thick batter, adjust consistency with buttermilk . grease a lined cake tin , pour batter into the tin , tap well,
  7. place it in the pre heated pressure cooker pan , close with lid, without the gasket and whistle. and place inside the heated pan . Cover with a lid ,
  8. let the gas flame be reduced to medium initially to low at the last few minutes of baking ... the baking time on gas stove will be around 25- minutes,
  9. when the top appears firm, and lightly brown, the cake begins to show signs of leaving the sides , its an indication the cake is done
  10. check with a tooth pick to see if it comes out clean . remove the cake tin , allow to cool on a rack . run a knife around the side,
  11. remove on to a plate . decorate with cherries, thandai powder.
