ABOUT Black Urad Dal RECIPE

Love the Dals / Lentils! As they are high in protein, super versatile, a good source of fiber and have lots of vitamins and minerals in them. Here is the unique style Black Urad Dal recipe. The Black Urad Dal is everyday Dal in Punjabi’s. Traditionally, the creaminess of the dal comes in slow cooking the lentil for hours but here we have tried recreating the creaminess by pressure-cooking the dal. This dal can be enjoyed with basmati rice as well as with Indian bread such as naan, paratha etc.

Ingredients Serving: 6

  1. Black Urad Dal – ½ + ¼ cup
  2. Water – 6 + 1 cup (Dal : Water ratio 1:4)
  3. Green Chillies – 2 small size
  4. Dry Red Chillies – 2 to 3
  5. Cumin Seeds / Jeera – ¾ tsp
  6. Asafetida / Hing – ¼ tsp
  7. Fennel Seeds / Saumph – ¼ tsp
  8. Grated Garlic – 1 tsp
  9. Red Chilli Powder / Lal mirchi – ½ tsp
  10. Turmeric Powder / Haldi – ¼ tsp
  11. Garam Masala – ¼ tsp
  12. Dry Mango Powder / Amchur – ½ tsp
  13. Salt – ½ + ¼ tsp
  14. Butter – 1 tsp
  15. Oil – 2 tablespoon
  16. Fresh Coriander Leaves – as required for garnishing
  17. Butter – as required for garnishing

Instructions

  1. In a mixing bowl, take ¾ cup of Black Urad Dal and wash with Water for 2 to 3 times.
  2. Then in pressure cooker add the washed Dal, 6 cups of Water, ½ tsp of Salt, ¼ tsp of Haldi Powder, 2 to 3 small Green Chillies, mix well and allow it to cook on medium flame for 5 to 7 Whistles.
  3. Once the Dal is cooked, add 1 tsp of Grated Garlic, mix well and keep aside.
  4. In a preheated pan, add 2 tablespoon of Oil, ¾ tsp of Cumin Seeds, 3 Dry Red Chillies, ¼ tsp of Hing, ¼ tsp of Fennel Seeds and ½ tsp of Red Chilli Powder.
  5. Now pour the cooked Dal into the pan and mix well.
  6. Furthermore, add ¼ tsp of Garam Masala, ½ tsp of Amchur Powder, ¼ tsp of Salt, 1 cup of Water and mix well.
  7. Add 1 tsp of Butter, mix and simmer on low flame for 5 min.
  8. Garnish with freshly chopped Coriander leaves, Butter and serve with Paratha or Rice.
