Ingredients to make Dalma

  • 1 cup potato cubes
  • 1 cup brinjal cubes
  • 1 cup dokla or ridge gourd cubes (jahni)
  • 1 cup tomatoes cubes
  • 1/2 cup carrot
  • 1/2 cup onion
  • 1/4 cup tendli or ivy gourd (toroda)
  • 2 green chillies
  • 1/2 cup tuar daal
  • 1/2 cup orange masoor daal
  • 1 tsp oil
  • 1 tsp ghee
  • 1/2 tsp mustard seeds
  • 1/4 tsp cumin seeds
  • 1 red chilli whole
  • 2 tsp cumin-red chili flakes
  • 1/4 tsp turmeric powder
  • 2 tsp chopped coriander leaves
  • Salt to taste
  • For garnishing:
  • 2 coriander strings
  • Cumin and red chilli flakes to sprinkle

How to make Dalma

  1. Soak the daal for 20 mins. ( I have taken both the daals as masor is more nutritious when compared to tuar daal.)
  2. Now add the turmeric powder, salt and 4-5 drops of oil. Pressure cook this till 2 whistle blows.
  3. Now remove the whistle, add sufficient water with all the veggies.
  4. Boil it at least for 20-25 mins till its tender. Then add ghee to this.
  5. Heat oil and add mustard seeds. When the mustard seeds start to crackle, add in cumin seeds, whole red chilli and add this to the daal mixture.
  6. Next, add chopped coriander leaves, cumin and red chilli flakes.
  7. Now pour the dalma into a serving bowl and sprinkle cumin-red chili flakes. Garnish it with coriander strings and serve it hot with rice or roti.
My Tip: When the dalma is done before adding tadka to this, add 1 tsp of ghee to enhance the taste. I have taken these veggies for Dalma as it was available during making. You can add pumpkin, lauki, raw papaya, raw bananas and french beans. The cumin red chilli flakes is a must, it just increases your taste buds.
