ABOUT Palak Kofta RECIPE

Palak (Spinach) is a leafy, green vegetable. It is one of the most nutritious foods on earth. The health benefits include improved eyesight, healthy blood pressure, stronger muscles, the prevention of age-related macular degeneration. Using such healthy ingredient In "Jai Ki Rasoi Se" made "Palak Kofta". This very traditional recipe of my mother and grandmother (Nani). This dish can be served with any Indian Bread and Rice

Ingredients Serving: 10

  1. Finely Chopped Spinach (Barik Kati Palak) - 8 to 10
  2. Fresh Coconut (Taza Nariyal) - 1 Cup
  3. Finely Chopped Dill Leaves (Suva Leaves) - 1 Cup
  4. Finely Chopped Coriander (Barik Kata Hara Dhaniya) - 2 to 3 Bunches
  5. Finely Chopped Mint (Barik Kata Hara Pudina) - 1 Bunch
  6. Green Chili (Hari Mirch) - 5 to 6
  7. Finely Chopped Onion (Barik Kati Pyaz) - 2 to 3 Medium Size
  8. Ginger & Garlic Paste (Adrak & Lasoon Paste) - 2 Table Spoon
  9. Gram Flour (Besan) - 2 Table Spoon
  10. Red Chili Powder (Lal Mirch Powder) - 2 Table Spoon
  11. Turmeric Powder (Haldi Powder) - 1 Tea Spoon
  12. Whole Spice Powder (Garam Masala Powder) - ½ Tea Spoon
  13. Coriander Powder (Dhaniya Powder) - 1 Tea Spoon
  14. Cumin Powder (Jeera Powder) - ½ Tea Spoon
  15. Oil - As per your requirement
  16. Salt to taste

Instructions

  1. Take a mixer grinder jar, add fresh coconut, finely chopped green coriander (One Bunch), finely chopped Mint Leaves and green chilies. Make a paste by adding little water. Take out the paste in a bowl and keep aside
  2. Add gram flour, red chili powder (1 Table Spoon), turmeric powder (½ Tea Spoon), whole spice powder, ginger garlic paste (1 Table Spoon), Coriander & Cumin Powder and salt according to taste. Mix all the ingredients. Make koftas of your desired size and keep it aside.
  3. Take a kadai or frying pan add oil as per your requirement for frying. Once the oil is hot add the Kofta. Immediately switch of the gas and allow the Kofta to get it fried in the oil. Once you find the temperature of oil is reduced switch on the gas on low or medium flame and fry the Kofta till they get the golden brown.
  4. In the same kadai take out the excess oil and keep the oil as per your requirement. Once the oil is hot add finely chopped onions. Cook it till the onions are fried and turns to little brow. Add ginger garlic paste (1 Table Spoon), turmeric powder (½ Tea Spoon). Mix all the ingredients.
  5. Add finely chopped spinach, dil leaves and green coriander. Also add red chili powder (1 Table Spoon) and salt according to taste. (Remember we added salt in kofta and spinach also contains salt). Mix all the ingredient and cook for 5 6 minutes.
  6. Once all the ingredients are cooked completely and curry starts leaving oil now add kofta and mix it gently. Cook it for another 5 minutes so that Kofta are properly get soaked in the curry and get the flavours.
  7. Now dish is ready can be served with hot paratha and steam rice
