ABOUT Beetroot - Jackfruit Seeds Mixed Curry RECIPE

Jackfruit seeds are used to make Mangalore cucumber curry, here me used that along beetroot. It is good accompanied with hot rice, chapathi and so on.

Ingredients Serving: 4

  1. Beetroot chopped 1 cup
  2. Jackfruit seeds chopped 1 cup
  3. Salt to taste
  4. Water
  5. Coriander seeds 1/4 cup
  6. Cooking oil 4 tsp
  7. Toor dal 2 tsp
  8. Urad dal 2 tsp
  9. Red chilli 3-4
  10. Jeera I tsp
  11. Methi seeds 1/2 tsp
  12. Asafoetida a pinch
  13. Artocarpus lacuacha 1/2" pieces 3-4
  14. Turmeric powder 1/4 tsp
  15. Jaggery syrup 1-2 tsp
  16. Turmeric powder 1/4 tsp
  17. Curry leaves 1 string
  18. Grated coconut 1 cup
  19. Cooking oil 1 tsp
  20. Mustard seeds 1 tsp
  21. Red chilli 1
  22. Curry leaves few

Instructions

  1. PEEL OFF AND CHOP BEETROOT, CRUSH AND REMOVE JACKFRUIT SEEDS PEEL
  2. CHOP EACH SEEDS IN TO SMALL PIECES, WASH THEM
  3. ADD IN TO BOILING WATER
  4. ADD SALT, COVER AND COOK THEM TILL TENDER
  5. HEAT COOKING OIL, FRY CORIANDER SEEDS IN LOW FLAME
  6. ADD TOOR DAL AND URAD DAL
  7. RED CHILLI
  8. JEERA I TSP, METHI SEEDS 1/2 TSP
  9. FRY TILL GOOD AROMA
  10. ASAFOETIDA, CURRY LEAVES
  11. TURN OFF THE FLAME AND ADD TURMERIC POWDER, SAUTE
  12. CHECK THE COOKNESS
  13. COMBINE GRATED COCONUT, FRIED MASALA
  14. ADD ARTOCARPUS LACUACHA, SOME WATER AND GRIND
  15. GRIND IN TO FINE PASTE
  16. TRANSFER GROUND PASTE IN TO COOKED VEGGIES
  17. ADD SUFFICIENT WATER
  18. MIX WELL
  19. ADD JAGGERY SYRUP 2 TSP
  20. BRING IT TO BOIL FOR 5 MINUTES IN LOW FLAME
  21. DO SEASONING, ADD CURRY LEAVES
  22. ADD SEASONING, COVER IT, TURN OFF THE FLAME AND SERVE IN HOT
