Rice Salad with Peanuts and Cashews

Ingredients to make Rice Salad with Peanuts and Cashews

  • 30 gms jasmine rice
  • 30 gms basmati rice or wild rice
  • 50 gms roasted peanuts
  • 1 tbsp sesame seeds lightly toasted
  • Coriander leaves
  • 1 fresh red chilli chopped
  • 1/2 inch ginger grated
  • 2 cloves of garlic finely chopped
  • 15 ml sesame oil
  • 1 tbsp soy sauce
  • 1/2 jaggery, grated

How to make Rice Salad with Peanuts and Cashews

  1. Cook the jasmine rice in boiling water for about 12 minutes or until cooked . Drain and leave to cool.
  2. Cook the Basmati or wild rice in boiling water for 20 - 25 minutes . Drain and leave to cool .
  3. Roughly grind half the total quantity of roasted peanuts in a food processor
  4. Mix the two types of rice, sesame seeds , chilli , coriander leaves and ground peanut .
  5. in a mixing Bowl add grated ginger , garlic , sesame oil , soy sauce and jaggery . Whisk properly till the jaggery has melted.
  6. Add the dressing mixture to the rice mixture. Mix well.
  7. Garnish with the remaining peanuts.
