ABOUT Onam Sadya RECIPE

Every year we are waiting for onam,amma makes wonderful onam sadya,which she learned all recipe from her malayale friend.Here i chopped the all veggies,grinding the masala,cooked the dal previous day itself.And also i prepared this in OPOS method.Finished the cooking in an hour.

Ingredients Serving: 4

  1. For Coconut Masala Paste : Grated Coocnut - 2 cups
  2. Green chillies -5
  3. Cumin seeds -2 tsp
  4. Grated Coconut - 2 cups
  5. Curd - 2 1/2 cups
  6. Chopped coriander leaves - 2 tbsp
  7. Curry leaves - 1 sprig
  8. Turmeric powder -1/4 tsp
  9. Roasted Coconut -1/4 cup
  10. Coconut Oil -3 tbsp
  11. Ghee -1/4 cup
  12. Salt -To taste
  13. Thick Coconut Milk - 1/2 cup
  14. Roasted Coconut bits -1 tbsp
  15. Roasted cashew,rasins -each 1 tbsp
  16. Common Temper :
  17. Coconut Oil -1/4 cup
  18. Mustard Seeds -2 tsp
  19. Dry red chilli -6
  20. Curry leaves - 2 sprig
  21. Instant Mango Pickle :
  22. Mango -1 (cut into small pieces)
  23. Salt -To taste
  24. Red chilli powder -2 tsp
  25. For Sambar :
  26. Cooked Tuvar Dal - 1/2 cup
  27. Tamarind Paste -2 tbsp
  28. Salt -To taste
  29. Turmeric Powder -1/2 tsp
  30. Salt -to taste
  31. Veggies -12 cup(carrot,beans,drumstick,brinjal)
  32. Sambar Powder - 1 tbsp
  33. To Temper :
  34. Coconut oil - 2 tsp
  35. Mustard Seeds -1/2 tsp
  36. Curry leaves -1 sprig
  37. Hing - 1/4 tsp
  38. Dry red chilli -1
  39. For Aviyal : Mixed veggies -1 cup(Drumstick,Raw banana,Carrot,Yam,Beans )(Chopped into matchsticks)
  40. Salt - To taste
  41. Turmeric Powder -1/2 tsp
  42. For Inji Puli : Roasted ginger -3 tbsp
  43. Tamarind Water -1/2 cup
  44. Turmeric Powder -1/4 tsp
  45. Red chilli powder -1 tsp
  46. Jaggery -2 tsp
  47. For Thoran : Grated Cabbage -2 cup
  48. For Inji Kichadi : Roasted Ginger - 2 tbsp
  49. For Carrot Beans Mezhukupuratti :
  50. Carrot,Beans -each 1/4 cup (Chopped into matchstick )
  51. Red chilli powder -1 tsp
  52. For Olan : Chopped ashgourd -1/2 cup
  53. Cooked red cow peas -2 tbsp
  54. Slit green chillies -2
  55. Curry leaves - sprig
  56. For Kootu Curry : Yam ,Raw banana - each 1 cup (chopped)
  57. Cooked black channa - 1/4 cup
  58. Red chilli powder -1 tsp
  59. Ghee -2 tsp
  60. For Erissery : Yam,Raw banana- Each 1/2 cup (chopped)
  61. For Paruppu : Moong dal - 1/4 cup
  62. For Kalan : Yam,Raw banana -each 1/2 cup (chopped
  63. Roasted Fenugreek seeds powder -1/4 tsp
  64. For Paruppu Pradhaman :Cooked moongdal -1/2 cup
  65. Jaggery syrup -1/4 cup
  66. Cardamom powder -1/4 tsp
  67. For Palada Payasam : Rice ada - 1/2 cup
  68. Milk - 2 1/2 cups
  69. Sugar -1/3 cup
  70. For Tomato Pachadi : Tomato -1 chopped
  71. For Rasam : Cooked tuvar dal -2 tbsp
  72. Rasam Powder - 2 tsp
  73. Tamarind paste -1 tbsp
  74. Tomato -1 chopped
  75. For Cooked Rice : Rice -2 cups
  76. Water -4 cups
  77. Pappadam -4
  78. Oil -To fry

Instructions

  1. *For Rice : In 5 L Pressure cooker,add the washed rice and water ,cook at high flame for 3 whistle.Once the pressure goes away,open fluffy the rice.Keep it aside
  2. * For Thoran,Aviyal & Mezhukupuratti : In a 5 L Pressure cooker add 1/4 cup water+2 tsp oil.Side by Side place the thoran veggies,Aviyal veggies and Mezhukupuratti veggies.Add salt on top of the veggies.
  3. *Top of the aviyal add 1/4 cup coconut paste .Now add the red chilli powder on top Mezhukupuratti veggies.Cook at high flame for 3 whistle,release the pressure.Remove the veggies carefully individually.
  4. *Add the grated coconut,Common tadka 1 tsp on thoran,Mix and kept it aside.For aviyal mix the curd ,curry leaves and coconut oil.Kept aside.For Mezhukupuratti mix and kept aside.
  5. For Erissery,Olan,Kalan : In 5L Pressure cooker add 1/4 cup water+2 tsp oil,place the erissery,olan,kalan veggies side by side.Add salt on the top of the each curry.On top of the erissery,Kalan veggies
  6. On top of the erissery,Kalan veggies add the 1/4 cup coconut paste .Cook at high flame for 2 whistle.Release pressure.Remove carefully each item seperately.For erissery mix 1 tsp common tadka and roasted coconut,kept aside
  7. For Olan mix 1 tsp coconut oil &1/4 cup coconut milk,keep it aside.For kalan mix with common tadka and curd 1/2 cup.kept aside.
  8. For Sambaram : Mix 1/2 cup curd&1/2 water,salt.add chopped curry leaves&coriander leaves. For Mango Pickle :Mic cut mangoes,red chilli powder,salt &common tadka.
  9. Fry the papadam in hot oil,kept aside.For Inji Kichadi : Mix the roasted ginger with 12 cup curd &common tadka.kept aside
  10. For Kootu curry &Pachadi :In 5L Pressure cooker add 1/4 cup water & 2 tsp oil,Add the kootu curry veggies and tomato on side by side.add salt on top.On top of the kootu curry add 1/3 cup coconut paste.
  11. Cook at high flame for 2 whistle.release pressure.remove the each veggies carefully.
  12. For Tomato pachadi ,mix the cooked tomato with 1/2 cup curd and common tadka,kept aside.For Kootu curry mix with common tadka and 1 tbsp roasted coconut.
  13. For Inji Puli :in a vessel boil the tamarind water with roasted ginger,salt,turmeric powder,red chilli powder.once the raw smell goes away add the jaggery and common tadka.keep it aside.
  14. For Sambar & Rasam : In a 5L Pressure cooker add the sambar &Rasam ingredients side by side .Add salt on the top .Cook at high flame for 3 whistle.Release pressure.
  15. *Remove the sambar ingredients,add common tadka,Required hot water and Tempering ingredients.Remove the rasam ingredients,mix with required hot water,curry leaves& coriander leaves.Keep it aside.
  16. For Paruppu Pradhaman :Mix the cooked moongdal,jaggery syrup,roasted cashew,raisins,roasted coconut bit,cardamom powder ,1/2 cup coconut milk,mix it well.
  17. For Palada Payasam : Roast the ada in little ghee and cook it in milk.Once it cooked well,add the sugar.Once it dissolves and switch off the flame.add the roasted cashew&raisin
  18. For Moru Kachiyathu : Mix the 1/2 curd ,salt,turmeric powderwith 1/2 water without any lumps,.Boil it,once starts to boil switch off the flame and add the common tadka.
  19. How To Serve : Place the Banana Leaf ,On the top of the left side place the banana,salt,Instant mango pickle,Lemon pickle (store bought),Nendran Chips(storebought)
  20. Followed by Puli inji,Inji Kichadi,Mezhukupuratti ,Thoran,Olan,Aviyal,Kootu Curry,Erisserry.On the bottom of the leaf,
  21. Papadam,Rice with Paruppu curry &ghee.On the right side place the sambar,rasam & Moru kachiyathu in a bowl.
  22. On the top of the leaf place Tomato pachadi,Kalan,Paruppu pradhaman,Palada payasam,Sambaram in a bowl .
