Baigan Bhaja

Ingredients to make Baigan Bhaja

  • Brinjal big size - 1 no
  • red chilli powder - 1/2 tbsp
  • turmeric powder - 1/2 tbsp
  • salt to taste
  • ginger-garlic paste - 1 tbsp
  • sooji (Rawa) to coat - 1/2 cup
  • mustard oil - 2 - 3 tbsp to fry

How to make Baigan Bhaja

  1. Wash the brinjal, pat dry and cut in round shapes
  2. Sprinkle turmeric, chilli powder, salt, ginger-garlic paste and rub it nicely.
  3. Leave it for 10 minutes and heat a non-stick pan/tawa.
  4. Take one round piece, coat it with rawa and put it on a non-stick tawa with little oil.
  5. Fry till it's golden crisp and by turning both sides. Follow this process for the rest of the pieces.
  6. Enjoy golden crisp bhaja with daal, rice and roti.

My Tip:

Rawa is required to coat the pieces and make crisp bhajas.
