ABOUT Beduan Roti/Makki roti with spicy arbi stuffing RECIPE

Beduan Roti is a very unique roti from kangra valley in Himachal Pradesh.Makki roti is stuffed with spicy arbi stuffing,which turns into delicious prantha.Away from home country my family missed so many things especially food.On weekends I prefer to prepare some traditional indian food from punjabi and himachali cusine.Currently i am living in Vietnam-Hanoi.

Ingredients Serving: 2

  1. INGREDIENTS FOR PREPARING MAKKI KI ROTI:-
  2. Makki ka atta/Corn Meal 1 Cup
  3. Luke warm water 1 Cup or As required
  4. Salt to taste
  5. INGREDIENTS FOR PREPARING STUFFING:-
  6. Arbi 100 gm
  7. Dry/Fresh Methi finely chopped 3 Tbsp
  8. Spring onions finely chopped 1No
  9. Dill/Sua finely chopped 1Tbsp
  10. Amchur powder 1Tsp
  11. Garam Masala 1/2Tsp
  12. Fennel seeds/Saunf 1Tsp
  13. Red chili powder 1Tsp
  14. Desi ghee/Butter 1/4 cup To roast roti
  15. Salt to taste

Instructions

  1. STEPS FOR PREPARING STUFFING:-
  2. Wash arbi properly and put in pressure cooker with enough water.
  3. Pressure cook for 2-3 whistles.Arbi should not be mushy.
  4. Drain the water from arbi and let the arbi cool down completely.
  5. When arbi cool down peel and grate arbi in a big bowl.
  6. Add spring onion,dill,methi,red chili powder, amchur powder,garam masala,fennel seeds and salt to grated arbi.
  7. Mix everything well to form a dough.
  8. Divide into 4 equal portions and keep aside.
  9. STEPS FOR PREPARING DOUGH FOR MAKKI KI ROTI:-
  10. In a big bowl add makki ka atta and salt.
  11. Add 1/4 cup of water and start kneading a dough.
  12. Use 1 Tbsp of water at a time to make a soft pliable dough.
  13. Divide into 8 equal portion and keep aside.
  14. STEPS FOR PREPARING BEDUAN ROTI:-
  15. Heat a tava and grease it with ghee/butter.
  16. Place plastic sheet or parchment paper on kitchen counter.
  17. Now place on ball of corn meal dough on a paper .
  18. With you damp finger press the ball to make a round shape.
  19. Same way prepare the second roti.
  20. On one roti place 1 ball of arbi stuffing.
  21. Press the stuffing gently so that it covers the roti ,except 1/2" away from the edges.
  22. Place the second makki roti on top of the first roti and gently press the edges to seal completely.
  23. Place the beduan roti on hot tava and cook till the side facing the tava starts turning brown.
  24. With a large spatula carefully lift the roti and apply ghee on tava.
  25. Gently flip the roti and cook on another side.
  26. Same way prepare all the beduan roti.
  27. Usually beduan roti served with homemade butter and buttermilk.
  28. I served with fresh curd and mango pickle.
