Khamang Kakdi

Ingredients to make Khamang Kakdi

  • 1 large Cucumber
  • 1 Green chilly
  • 1 Lime
  • 1tbsp Peanuts roasted & crushed
  • 2tsp Grated Coconut
  • 1tsp Ghee
  • ĵ tsp Cumin seeds
  • Few sprigs of Coriander
  • Black salt to taste
  • Salt to taste

How to make Khamang Kakdi

  1. Peel & finely chop cucumber. Squeeze out the moisture & keep aside.
  2. Wash, clean & finely chop coriander & keep aside
  3. Remove lime juice, chop green chilly & keep aside
  4. Mix all the ingredients except ghee & cumin seeds.
  5. In a saucepan, heat pure ghee & add cumin seeds. Once they crackle, remove from flame & pour this over the cucumber mixture & mix well.
  6. Season it with salt & black salt & garnish with chopped coriander.
  7. Serve at room temperature.

My Tip:

Make the tempering & add the salt just before serving
