Ingredients Serving: 2

  1. 250 gm cauliflower
  2. Milk 1 cup
  3. Salt to taste
  4. 1 star anise
  5. 1 black Cardamom
  6. 3 green cardamom
  7. 1 tsp Ginger powder
  8. Pinch of turmeric
  9. 3 tbsp Desi ghee + to deep fry
  10. 1 cup curd
  11. 1 1/2 tbsp fennel powder
  12. 1/2 tsp cardamom powder
  13. 1/2 tsp pepper powder
  14. 1/2 tsp mint powder
  15. 1/2 tsp fenugreek leaves powder
  16. 4 green chillies
  17. 6 raisins
  18. 5-6 fried cashews

Instructions

  1. HEAT 1 CUP OF MILK, ADD 1 TBSP FENNEL POWDER & PINCH OF TURMERIC POWDER
  2. IN MORTAR PASSEL, GRIND 1 BLACK CARDAMOM, 3 GREEN CARDAMOM & 1 STAR ANISE
  3. ADD IT TO THE MILK AND ALSO ADD 1/2 TSP GINGER POWDER
  4. ADD 250 GM LARGE FLORETS OF CAULIFLOWER IN MILK
  5. ADD 1/2 CUP OF WATER
  6. LET IT BOIL FOR 2 MINUTES
  7. NOW STRAIN IT
  8. DEEP FRY THE FLORETS IN DESI GHEE, TILL BROWN
  9. TAKE OUT ON TISSUE
  10. HEAT 2 TBSP GHEE IN A PAN
  11. TAKE 1 CUP CURD IN A BOWL, ADD 1/2 TSP FENNEL POWDER, 1/2 TSP CARDAMOM POWDER
  12. 1/2 TSP GINGER POWDER
  13. 1/2 TSP BLACK PEPPER POWDER AND MIX WELL
  14. ADD THE CURD MIX TO THE GHEE AND STIR CONSTANTLY IN ONE DIRECTION
  15. LET IT BOIL FOR 2 MINUTES
  16. ADD 4 SLIT GREEN CHILLIES, 1/2 TSP KASURI METHI POWDER 1/2 TSP MINT LEAVES POWDER
  17. ADD FRIED CAULIFLOWER
  18. ADD LEFTOVER MILK AND SALT
  19. ADD 5-6 RAISINS AND COOK FOR 2 MINUTES
