Ingredients Serving: 4

  1. Pani poori 12 pieces
  2. 1 cup potatoes, boiled and mashed
  3. 1/2 cup boiled black chana
  4. Salt to taste
  5. Panipuri masala
  6. Red chilli powder
  7. Chat masala
  8. Fresh dhaniya/coriander
  9. For the outer layer/dhokala batter:
  10. 1 cup rice
  11. 3 tbsp chana dal
  12. 2 tbsp urad dal
  13. 2 tbsp moong dal
  14. 2 tbsp tuar dal
  15. Mint chutney
  16. Sweet chutney
  17. Salt to taste
  18. 1/4 tsp saji na phool
  19. 1 tsp soda bicarbonate
  20. Oil to fry

Instructions

  1. Take a bowl, add the aloo, chana and all the masalas. Mix it well and keep aside, take a poori and stuff it full with the masala and keep aside.
  2. Grind the rice and all the dals together to prepare the batter. Blend till a fine paste forms.
  3. Take a separate bowl, add in the batter and keep to ferment. When it's ready, add salt, soda, saji na phool and mix it well. Then add the mint chutney and mix again.
  4. Heat a pan, add oil when the oil is hot, dip the puchka into the batter and fry till they are crispy or golden brown.
  5. Drain the excess oil on a tissue and serve it with sweet chutney.
