ABOUT Homemade Lasagna RECIPE

Tender vegetables, a light tomato sauce and white sauce with lots of cheese make this vegetable lasagna recipe one of our favorites.

Ingredients Serving: 4

  1. Cooked pasta sheets -6
  2. FOR RED SAUCE:
  3. 6-7 large tomatoes, blanch and chop)
  4. Chopped Garlic : 1 tbsp
  5. Dried Italian herbs : 1 tsp
  6. Chili flakes : 1 tsp
  7. Chopped Garlic : 1 tbsp
  8. Salt : 1 tsp (as per the taste)
  9. Sugar : 1 tsp
  10. Black pepper : 1/2 tsp
  11. Olive oil : 1 tbsp
  12. FOR WHITE SAUCE:
  13. Butter 1 tbsp
  14. All purpose flour 1 tbsp
  15. Full fat milk 1 cup
  16. Olive oil 1 tsp
  17. Salt to taste
  18. Black or white pepper 1/2 tsp
  19. Cheddar cheese 3/4 cup
  20. Italian herbs 1 tsp
  21. ROASTING THE VEGETABLES
  22. Onion 3/4 cup
  23. Bell pepper 1-1/2 cup
  24. Cabbage 1/4 cup
  25. Salt to taste
  26. Chilly flakes 1 tsp
  27. Italian herbs 1 tsp
  28. Basil leaves 5-6
  29. Chopped garlic 1 tbsp
  30. Oil 1 tbsp
  31. Mozerella cheese

Instructions

  1. FOR THE RED SAUCE - CUT AN "X" AT THE BOTTOM OF 6-7 TOMATOES LIKE THIS
  2. ADD TO BOILING WATER, SIMMER FOR 4-5 MINS
  3. PEEL OFF THE SKIN, ROUGHLY CHOP THEM
  4. HEAT 1 TBSP OLIVE OIL, ADD 1 TBSP CHOPPED GARLIC, FRY TILL GOLDEN BROWN
  5. ADD THE BLANCHED & CHOPPED TOMATOES
  6. ADD SALT, 1 TSP ITALIAN SEASONING, 1/2 TSP PEPPER POWDER, 1 TSP SUGAR
  7. ADD 1 TSP RED CHILLI FLAKES, COOK FOR 7-8 MINS
  8. RED SAUCE IS READY NOW, TAKE OFF HEAT
  9. FOR THE WHITE SAUCE - HEAT 1 TBSP EACH OF OIL & BUTTER, ADD 1 TBSP FLOUR, STIR BRISKLY
  10. SLOWLY ADD THE MILK, WHISK CONTINUOUSLY SO THAT NO LUMPS ARE FORMED
  11. ADD SALT, 1/2 TSP PEPPER POWDER, 1 TSP ITALIAN SEASONING
  12. ADD 3/4 CUP CHEDDAR CHEESE, STIR & COOK TILL THICK
  13. THE WHITE SAUCE IS READY, TAKE OFF HEAT
  14. HEAT 1 TBSP OIL, ADD 1 TBSP CHOPPED GARLIC, SAUTE UNTIL GOLDEN BROWN
  15. ADD 1/4 CUP ONIONS, SAUTE UNTIL TRANSLUCENT
  16. ADD 3/4 CUP BLANCHED BROCCOLI FLORETS, 1.5 CUPS CHOPPED TRI COLOURED BELL PEPPER, 1/4 CUP CABBAGE
  17. ADD SALT, FEW BASIL LEAVES, 1 TSP EACH OF ITALIAN SEASONING & RED CHILLI FLAKES, MIX & TAKE OFF HEAT
  18. FOR THE LAYERING - GREASE A BAKING DISH WITH OLIVE OIL
  19. ADD SOME READY RED SAUCE & SPREAD, LAYER WITH SEMI-COOKED PASTA SHEETS
  20. SPREAD SOME COOKED VEGGIES, POUR IN SOME WHITE SAUCE & SPREAD
  21. ADD SOME GRATED MOZZARELLA CHEESE
  22. REPEAT THE SAME LAYERING PROCESS THRICE
  23. COVER THE PAN WITH ALUMINUM FOIL
  24. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 20 MINS
  25. REMOVE THE ALUMINUM FOIL, BAKE AGAIN FOR 15 MINS
  26. LET IT REST FOR 15 MINS ONCE IT'S OUT OF THE OVEN
  27. SLICE & SERVE
