Sticky rice with Mangoo

Ingredients to make Sticky rice with Mangoo

  • 150 gm sticky rice, soaked in water for atleast an hour and drained
  • 225 ml water
  • 200 ml coconut milk
  • 100 gm sugar
  • 1/2 tsp salt
  • 3 ripe mangoes
  • Roasted sesame seeds to garnish

How to make Sticky rice with Mangoo

  1. Cook the rice in water for about 20 mins with no hard bits remaining.
  2. While the rice is cooking, take the coconut milk, sugar, salt in a pan and heat on a low frame. Stir constantly till the sugar has dissolved. (Do not boil it as you do not want the flavour of coconut milk to be diminished.)
  3. Once the rice is cooked, pour three fourths of the coconut sauce on top of the rice and let it mix well. Each grain of the rice should be well coated with it.
  4. Slice the mangoes and keep aside.
  5. To serve, scoop a big spoon of rice onto a plate. Drizzle little coconut milk sauce on top, garnish with sesame seeds and serve it with sliced or cubed mangoes .
