Thukpa Veg Soup

Ingredients to make Thukpa Veg Soup

  • 1/2 cup noodles
  • 1 tsp each of ginger and garlic, finely chopped
  • 1/2 small sized onion, diced
  • 8-10 strings of chopped beans
  • A small sized carrot, chopped
  • A small cabbage piece, finely diced
  • A small piece of capsicum, finely chopped
  • A few sweet corn kernels
  • Spring onion finely chopped
  • Small sized tomato chopped
  • 2 Cups water
  • A dash of black pepper powder and garam masala
  • 1 small green chilli, slit
  • salt to taste
  • 2 tsp olive oil or any cooking oil
  • Soya sauce (optional)

How to make Thukpa Veg Soup

  1. Cook the noodles, drain and keep aside.
  2. Heat oil in a pan, saute the ginger and garlic for a few seconds.
  3. Add the onions and chilli, saute till the onion is light pink in colour. Now add the other vegetables and cook till tomatoes are soft.
  4. Add water and boil for 3-4 minutes or till the veggies are 3/4 done. You can make soya sauce at this stage.
  5. Then add garam masala and black pepper powder. Add boiled noodles and turn off the gas.
  6. Pour into a soup bowl and garnish with coriander leaves.

My Tip:

You can add vegetables of your choice.

Actually thukpa is a tibetan dish that is widely loved and eaten in all parts of north east india. Also what kind of noodles should we use to prepare this dish? Hakka noodles?
