Matar paneer is one of the most popular veg dish that is made from fresh paneer and green peas. I learnt this from my mother. For me, she makes the best matar paneer recipe on earth.

Paneer cubes 200 gms
Fresh Green Peas 1/2 cup
Cumin seeds 1/2 tsp
1 large Onion, chopped
1" ginger piece
10-12 pods of garlic
2, green chillies
3 medium tomatoes
Cumin powder 1 tsp
Coriander powder 2 tsp
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Salt according to taste
Sugar 1 tbsp or according to taste
Garam masala powder 1/2 tsp
Kasuri methi 1 tsp
Butter 1 tbsp
Refine oil 3 tbsp
Instructions
Bring 1 cup of water to a boil, pour the peas into the boiling water. Stir and let the peas boil, uncovered. Remove the pan from heat after 1-2 minutes and keep the peas in the the pan for another 2-3 minutes. Now strain the peas and keep them aside.
Now take ginger, garlic and green chillies together and make a smooth paste.
Chopped the onion and make a smooth paste of those tomatoes.
Heat oil in a pan, fry the paneer cubes till light golden brown. Remove from oil and keep aside.
Now add cumin seeds in the same oil. Wait for a few seconds.
Add chopped onions and saute till it turns translucent.
Now add ginger-garlic-green chilli paste, fry till the raw smell goes away.
Add tomato paste, saute till oil starts to separate. It will take around 1-2 minutes.
Now add cumin powder, coriander powder, red chilli powder, turmeric powder, garam masala powder, salt, sugar and a little amount to water. Saute for another 4-5 minutes on medium flame.
Next add fried paner cubes and boiled peas together, mix them with masala and fry for 2-3 minutes on medium flame.
Now add one cup of warm water and salt, mix properly and cook covered for 3-4 minutes on medium flame.
Atlast add butter and crushed kasuri methi, mix with the gravy and cover the pan with the lid. Turn off the heat and wait for 5 minutes.
Now uncovered the pan and transfer prepared curry to a serving bowl.
