ABOUT Nagore Special Vaada RECIPE

This is one of the very famous and signature recipe of NAGORE, a town in Tamilnadu. It tastes yumm, has its own taste as we add prawns to it. This is my all time fav from my mom's kitchen. Yes it is vaadaa (not vada :P)

Ingredients Serving: 6

  1. Cooked leftover rice - 1 cup
  2. Semolina - 1/2 cup
  3. Raw rice - 3/4 cup
  4. Prawns- 1/4 cup
  5. Shallots - 10-12
  6. Baking soda-1/2 tsp
  7. Green chillies - 3
  8. Ginger garlic paste - 1tsp
  9. Grated coconut - 2 tbsp
  10. Turmeric powder - 1/2 tsp
  11. Salt - as per taste
  12. Oil- for frying

Instructions

  1. In a mixing bowl, take the old leftover rice, semolina and baking powder. Mix them very well with hands.
  2. Let this mixture sit for about 4-5 hours to ferment. After the time has reached, insert a finger it should go smoothly and if you take some mixture in your finger and slightly stretch it between your thumb and index finger, it should form slight thread like consistency.
  3. Now powder the raw rice into a coarse form and add that into the fermented rice mixture. Add salt to taste. Mix well and let it sit for sometime
  4. In a pan, pour some oil. Add in the shallots, green chilli, prawns and saute them. Add grated coconut. Then add ginger garlic paste and salt accordingly. Finally add turmeric powder and give a nice mix. Switch off the flame.
  5. After the prawn mix have cooled a bit add them into the fermented mixture and mix well.
  6. Now to make vaadaas, take a plastic sheet and apply some water on its surface. Also apply some water to your hands. Take a ball of mixture and place it on the plastic sheet and start pressing it into a nice round shape. Finally make a bit bigger hole in the centre. Fry these vaadaas in the hot oil until golden brown.
  7. Now crispy and soft vaada is ready. It taste amazing. Also you can serve this with some finely chopped onion mixed with some grated coconut, salt, turmeric powder and some lemon juice
