Ingredients Serving: 4

  1. Bitter gourd 400 gram
  2. Fresh Curry leaves-8-10numbers
  3. Onions big size - 2 number sliced
  4. Whole spices -
  5. Fenugreek seeds-1/2teaspoon
  6. Onion seeds-1/4th teaspoon
  7. Cumin seeds-1/2teaspoon
  8. Fennel seeds -1/2teaspoon
  9. Small mustard -1/2teaspoon
  10. Powdered spices-
  11. Turmeric powder-1/2teaspoon
  12. Red chilli powder-1teaspoon
  13. Coriander powder-1teaspoon
  14. Salt to taste
  15. Dry mango powder-1tablespoon
  16. Ginger garlic paste -1 teaspoon
  17. Oil-4 table spoon
  18. Grated fresh or dry coconut-1/4-1/2cup

Instructions

  1. Rins bitter gourd with water and take out the skin.
  2. Grate bitter gourd in a food processor or with a manual grater
  3. Heat oil in a kadai until smoking point reaches ,now reduce the flame and add all whole spices and curry leaves.
  4. After raw smell of whole spices goes add in sliced onions and fry for a while..
  5. Add in grated bitter gourd stir fry for 2 to 4minutes add some salt Cover and cook for 2minutes.
  6. Add all the powdered spices Jeera power.coriander powder, Red chilli powder,turmeric powder,ginger garlic paste saute for 2 to 3 minutes on a high to medium flame
  7. Add in dry mango powder and grated dry or fresh coconut.
  8. Cover and cook for 3-4minutes on medium flame.
  9. Now bitter gourd bhurji is ready
  10. Serve hot with toor daal fry and plain chapati and Rice.
