I have tasted this kanchi at my friends place.Its a nutritious one made with rice and dal and cooked with some spices....Country : FRANCE

Ingredients Serving: 4

  1. Raw Rice - 1 cup
  2. Yellow moong dal -1/4 cup
  3. Onion -1 ,big chopped
  4. Tomato -1 ,big chopped
  5. Ginger Garlic paste -1 tbsp
  6. Green chillies -2,finely chopped
  7. Salt -to taste
  8. Fenugreek seeds -1 tsp
  9. Thick Coconut milk -1/4 cup
  10. Water - 3 cups
  11. Oil -1 tbsp
  12. Ghee - 2 tbsp
  13. Mint & Coriander leaves - each handfistful,finely chopped
  14. Cloves -2
  15. Cinnamon stick -1/2"stick
  16. Carrot -1,peeled &chopped finely
  17. Cooked Maize - 1/4 cup(i used tine one )

Instructions

  1. *First wash the rice,dal and fenugreek seeds together.Soak it for 10 mins.Drain the water completely.In a pressure cooker ,heat oil +ghee and temper with cloves,cinnamon.
  2. Then add the chopped onion,green chillies.Saute well,then add the ginger garlic paste.Saute well until the raw smell goeas away.Then add the carrot&maize,saute it for 2 mins.
  3. Add the soaked rice &dal,saute it for 2 mins.Add the water,chopped tomato,mint&coriander leaves.Close the lid and put the weight.
  4. *After 1 whistle came,low the flame and cook it for 15 mins.Once the pressure settled down mash it well.Add salt & coconut milk.mix well !!
  5. *Serve hot with coin Masal vada !!
