Nepali Alu Dum/ Alu Dum/ Aloo Dum

Ingredients to make Nepali Alu Dum/ Alu Dum/ Aloo Dum

  • Potatoes, medium (boiled and peeled) - 1 kg
  • Garlic - 50 gms
  • Dry red chillies - 25 gms
  • Black cumin seeds/ Kalonji - 1 tsp
  • Mustard oil - 5 tbsp
  • Turmeric powder - 1/2 tsp
  • Kashmiri red chilli powder - 1/2 tsp
  • Water - 1/2 cup
  • Salt to taste
  • Coriander leaves, finely chopped

How to make Nepali Alu Dum/ Alu Dum/ Aloo Dum

  1. Soak the chillies in hot water for 30 minutes and keep aside.
  2. Peel the garlic and keep aside. Make a fine paste of garlic and chillies.
  3. Heat oil in a heavy bottomed kadhai. Add kalonji and let the seeds crackle.
  4. Add the garlic paste, water, chili powder, salt and turmeric. Mix well. Let it cook covered. Keep stirring in between.
  5. Cook till the oil separates. Add the boiled potatoes and mix well.
  6. Keep cooking and stirring lightly for 10 minutes till the potatoes are well coated.
  7. Sprinkle generous amount of coriander leaves and mix well.
  8. Serve hot or cold.

My Tip:

Decrease the quantity of garlic if you do not like it much. Adjust the quantity of dry chilli according to your preference. You can omit chilli powder. I've used it just for color.
