ABOUT Meetha Aam ka Achar RECIPE

Raw mango pieces matured with Jaggery with aromatic fennel seeds, coriander seeds and fenugreek seeds.

Ingredients Serving: 10

  1. Raw mangoes 500 gm
  2. Salt 20 gm
  3. Jaggery 500 gms
  4. Red chilli powder 1/2 tesp
  5. Turmeric powder 1/4 tesp
  6. Fennel seeds 1 tesp
  7. Coriander seeds 1 tesp
  8. Fenugreek seeds 1/4 tesp

Instructions

  1. WASH, PEEL, DESEED & CUT 500 GMS RAW MANGOES INTO SMALL PIECES
  2. ADD 30 GMS SALT, COVER & SET ASIDE FOR 7-8 HOURS
  3. STRAIN THE MARINATED MANGO PIECES, RETAIN THE WATER FOR LATER USE
  4. SUN DRY THE MANGO PIECES FOR 3-4 HOURS
  5. HEAT THE MANGO WATER, ADD 500 GMS JAGGERY, COOK TILL IT DISSOLVES
  6. DRY ROAST 1 TSP EACH OF FENNEL & CORIANDER SEEDS, 1/2 TSP FENUGREEK SEEDS
  7. CRUSH THE ROASTED SPICES COARSELY
  8. ADD THE MANGO PIECES INTO THE MELTED JAGGERY
  9. COOK TILL YOU GET A ONE THREAD CONSISTENCY LIKE THIS
  10. ADD 1/2 TSP RED CHILLI POWDER, 1/4 TSP TURMERIC POWDER, THE GROUND SPICES, MIX & TAKE OFF HEAT
  11. ALLOW IT TO COOL COMPLETELY, STORE IN A STERALISED, AIRTIGHT GLASS JAR
