Couscous cooked fluffy and than seasoned with Paneer, Corn and roasted chana.

Ingredients Serving: 3

  1. Couscous 1 cup.
  2. Water 1 1/2 cup.
  3. Salt to taste
  4. Onions chopped 2
  5. Tomato 1 (big) chopped
  6. Boiled Corn 1/2 cup
  7. Roasted chana whole 1/2 cup ( without skin)
  8. Paneer grated 1/2 cup.
  9. Garlic crushed 4 to 5 cloves
  10. Ginger grated 1 tsp
  11. Green chillies 2 ( chopped)
  12. Cardemom stick 1/2 inch ( break in pieces)
  13. Badi elaichi 1
  14. Urad daal 1 tbsp
  15. Curry patta few
  16. Mustard seeds 1 tsp
  17. Coriander leaves chopped 2 tbsp
  18. Olive oil 2 tbsp
  19. Butter 1 tbsp ( optional)

Instructions

  1. Boil water by adding 1 tbsp oil and salt. Add cardemom stick too.
  2. Add boiling water to couscous and cover the vessel. Leave for 15 minutes.
  3. Fluff with fork.
  4. Heat oil in a pan , Add mustard seeds, green chillies and urad daal. After it splutter add cardemom stick and badi elaichi.
  5. Add chopped onions after a minute, Saute for 2 minutes. Add ginger ,garlic and curry leaves.
  6. Add roasted Chana. Fry for a minute. Now add chopped tomatoes.
  7. Stir fry and add billed corn.
  8. Adjust salt and masala. I have not added red chili , but you can add green chili paste or red chilli powder according to your taste.
  9. Add Couscous. Mix gently.
  10. Cover and let everything cook together for a while. Keep grated Cottage cheese (Paneer)ready.
  11. Add butter ( optional ) . Spread grated cottage cheese and garnish with coriander leaves.
