ABOUT Aloo Paratha with Dahi and Aachar RECIPE

In Bihar various kinds of stuffed paratha is famous for breakfast. I'm sharing this aloo paratha recipe that is a soft dough stuffed with the spicy filling of mashed potatoes and other Indian spices which is then rolled out into big round shapes of paratha and served with plain yogurt and pickles.

Ingredients Serving: 4

  1. Whole Wheat Flour 1 cup
  2. A pinch of salt
  3. 1 cup of water
  4. Oil 1/4 cup for kneading
  5. Filling Ingredients:
  6. Boiled and mashed potatoes 5 medium sized
  7. Onion finely chopped 1 medium sized
  8. Green chillies 1-2, finely chopped
  9. Turmeric powder 1/2 tsp
  10. Red chilli powder 1 tsp
  11. Coriander powder 1/2 tbsp
  12. Lime Juice 1 tsp
  13. Black mustard seeds 1 tsp
  14. Salt to taste
  15. Green Coriander leaves 1 tbsp
  16. Garam masala powder 1 tsp (optional)
  17. Oil for cooking and frying the filling
  18. A dash of butter for toppings (optional)

Instructions

  1. Make a soft dough with the specified ingredients. Divide the dough into balls as per the required size.
  2. Heat 2 tsp of oil in a pan add the black mustard seeds, once it crackles add the green chillies and chopped onion.
  3. Once the onion becomes pink in color, add turmeric powder, red chilli powder, coriander powder, mashed potatoes and salt. Mix it properly so it is combined like a dough. Turn off the heat then add the lime juice, garam masala powder and green coriander leaves to mix well.
  4. The potato filling is prepared, keep it aside to cool down. Take each portion of the dough and flatten on a palm, now stuff the filling in the dough. Close the edges properly and roll into balls.
  5. With a rolling pin, flatten the balls into 1/2" thick round parathas.
  6. Heat pan on a medium flame. Apply oil on both sides and cook till the parathas are golden and cooked through.
