ABOUT Creme Brulee RECIPE

This has to be perhaps one of the easiest Creme brulee recipes ever. Adapted from our favourite cookbook author , Dorie Greenspan, it's hard to go wrong with this recipe

Ingredients Serving: 6

  1. 1 1/2 cups cream
  2. 1/2 milk
  3. zest of 1 orange
  4. 1 tsp vanilla
  5. 6 egg yolks
  6. a pinch of salt
  7. 1/3 cup sugar
  8. 1/2 cup brown sugar to torch

Instructions

  1. 1. Heat the milk and the cream together with the orange zest . Turn off the heat and let this steep for 30 minutes.
  2. 2. Preheat the oven to 140 degree centigrade. Beat the egg yolks, vanilla, salt and sugar till smooth but not airy.
  3. 3. Pour the milk mixture into the egg mixture, mix well, trying your best not to get too many air bubbles.
  4. 4. Strain this mix and pour into 6 ramekins and bake for 45 minutes, turning the heat to 120 degree centigrade after the first 15 minutes of baking.
  5. 5. Remove and chill (a few hours atleasr) until serving. To serve, spoon over sugar grains and then use a blow torch to caramelise the sugar on top. If you do not have a blow torch, heat the back of a spoon and then press onto the sugar. Continue doing so until all the sugar has caramelised. Serve immediately.

I really want to try Creme Brulee but i cant have eggs. Any substitute particularly for this?
