Ingredients Serving: 10

  1. 1/2 cup or 113 gms unsalted butter at room temperature
  2. 1 and 1/2 cups All purpose flour/ Maida
  3. 3/4 cup or 85 gms Powdered/ Icing sugar
  4. 2 Egg yolks at room temperature
  5. 2 tbsp unsweetend Cocoa powder
  6. 1 tsp Baking powder
  7. 1/4 cup chocolate chips divided into two portions
  8. 1/8 tsp or a big pinch of salt

Instructions

  1. Sift the flour, cocoa powder, salt, baking powder and set aside. Take butter in a bowl and whisk it until its smooth.
  2. Next beat in the egg yolks. Later add the powdered/ icing sugar in intervals and beat until well combined. The mixture will turn out light and fluffy.
  3. Now add in the sifted flour mix, half of chocolate chips and knead into a smooth dough using your hands. The moisture in the butter mix is enough to knead a dough and no additional liquid is needed.
  4. Once kneaded well, place this in the refrigerator for 10 mins. Because of all the kneading, the butter will start to melt and result in a sticky dough, thus placing it the refrigerator tightens the dough and helps while rolling/ shaping.
  5. Sprinkle a tbsp of flour over the counter top or work table. Place the dough over it and start rolling with a rolling pin into a square or rectangular sheet of 0.5 mm thickness all over, now with the help of a square cookie cutter cut into square shapes.
  6. Now run a toothpick and make lines over the biscuits as per your preference, I made five lines diagonally. Now press the remaining chocolate chips over the cookies, preferably two or three on each cookie.
  7. Now place them on a parchment lined baking sheet leaving an inch gap in between. Bake this in an preheated oven at 180°C or 356°F for about 10 to 12 mins. Do not over bake as the chocolate burns real quick.
  8. Once baked to perfection remove them on to a cooling rack carefully and allow them to cool at a room temperature.
