ABOUT Bihari Litti Chokha RECIPE

It's a Bihari dish filled with Sattu and Alu/Potato, Baigan/ Brinjal chokha.

Ingredients Serving: 4

  1. Refined flour (maida) 1 and 1/2 cups and little extra for dusting
  2. Yogurt 1 cup
  3. Salt to taste
  4. For the Filling:
  5. Sattu
  6. 1 cup ginger, chopped
  7. 4 cloves
  8. Green chillies, chopped
  9. 1 inch garlic chopped
  10. Fresh coriander leaves, chopped
  11. 1 tbsp carom seeds/ ajwain
  12. 1 tsp kalonji/ onion seeds
  13. Salt to taste
  14. Lemon juice 1 tsp
  15. For chokha:
  16. Boiled potatoes 2
  17. Egg plant 1 small sized, burnt
  18. Mustard oil
  19. Coriander leaves
  20. Green chillies, finely chopped
  21. Lime juice 1 tsp
  22. 2 onions, finely chopped
  23. Salt to taste
  24. For the tomato chutney:
  25. Burned tomato
  26. Green chilles, finely chopped
  27. Onion, finely chopped
  28. Coriander leaves, finely chopped
  29. Salt to taste

Instructions

  1. Preheat the oven to 180°C. Add salt, yogurt and ajwain to the refined flour and knead into a soft dough. Then rest the dough for some time.
  2. For the filling, mix sattu with ginger, garlic, green chillies, coriander leaves, carom seeds, onion seeds, salt, lemon juice mustard oil and a little water.
  3. Divide the dough into lemon sized balls and spread them into small puris with your fingers. Place a portion of the filling mixture and once again roll into balls. Arrange them on a silicon baking sheet placed on a baking tray.
  4. Place in the preheated oven and bake till the top is lightly browned. Then turn over and bake for some more time till the other side is equally browned.
  5. Serve hot. You can drizzle ghee over the littis if you wish.
  6. For the chokha, peel and mash the potato and egg plant (which you have burned in the stove or saghdi). Then mix all the ingredients for the chokha in it.
  7. For the tomato chutney, peel and mash the tomato with your hand and mix all the ingredient for the chutney in it. our litti chokha with chutney is ready to eat.
  8. Serve hot and pour desi ghee on litti at the time of serving.
