Ingredients to make Sugondhi Bhapa Betki

  • 5 PIECE OF BONELESS BETKI FILLET (KOLKATA BETKI)
  • Salt to taste
  • 2 GANDHORAJ LEMON
  • 2 TBSP CASHEW NUT-POPPY SEED PASTE
  • 2 tbsp Fresh Cream
  • 2OO GM HUNG CURD
  • 1 TBSP GREEN CHILLI PASTE
  • 3-4 tbsp butter
  • 1 tbsp Lime juice
  • 5 BANANA LEAF PIECES TO COVER THE FISH FILLETS

How to make Sugondhi Bhapa Betki

  1. MARINATE THE FISH FILLET WITH SALT AND LIME JUICE FOR 15 MINS.
  2. MIX CURD WITH FRESH CREAM, CHILLI PASTE, CASHEW NUT-POPPY SEED PASTE AND SALT.
  3. NOW ADD 2 TBSP GANDHORAJ LEMON ZEST AS WELL AS 3-4 DROPS OF GANDHORAJ INTO THE MIXTURE. MIX IT WELL.
  4. TURN ON YOUR MICROWAVE AND PUT THE BANANA LEAF PIECES INSIDE. GIVE THE TIMER OF 30 SECONDS.
  5. TAKE OUT THE LEAF PIECES.
  6. TAKE THE MELTED BUTTER IN A BOWL. DIP ALL THE FISHES INTO THE BUTTER.
  7. TAKE 1 TBSP MIXTURE. SPREAD IT ON THE MIDDLE OF THE BANANA LEAF, NOW PUT THE FISH PIECE ON IT. ONCE AGAIN COAT THE FISH FROM THE TOP WITH ANOTHER 1 TBSP MIXTURE. THEN TIE UP THE BANANA LEAF LIKE A PARCEL.
  8. HEAT WATER IN A STEAMER FOR 20 MINS. NOW STEAM THE FISH FOR 15-20 MINS.
  9. SERVE WITH STEAMED RICE.
