ABOUT Chicken Lettuce Wrap RECIPE

A health appetizer with protein, green vegetable and very little fat.

Ingredients Serving: 10

  1. 1 tablespoon olive oil (or vegetable oil)
  2. 500 gm ground chicken
  3. 2 cloves garlic, minced
  4. 1 onion, diced
  5. ¼ cup hoisin sauce
  6. 2 tablespoons soy sauce
  7. 1 tablespoon rice vinegar (white)
  8. 1 tablespoon freshly grated ginger
  9. 1 tablespoon hot sauce (optional)
  10. ½ tablespoon curry powder (or any sabzi masala)
  11. 250 gm diced water chestnuts
  12. 2 spring onions, thinly sliced
  13. Salt and freshly ground black pepper, to taste
  14. 1 bunch lettuce
  15. Rice noodle broken into 2-3 inch pieces

Instructions

  1. Heat oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
  2. Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and hot sauce until onions have become translucent, about 1-2 minutes.
  3. Stir in chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
  4. Fry rice noodles crisp in hot oil (less than a minute). Avoid over-frying as it will burn the noodles.
  5. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, sprinkle crunchy fried rice noodle strands.
